Why Carbon?

Carbon Kitchen + Market is an independent, woman-owned business. It was started to pay homage to our roots, pit beef and pit-fired cooking. Pit beef originated in the 1970's along the Pulaski Highway in Baltimore, Maryland, where Carbon owner, Catherine, is from.

Pit beef is roast beef prepared over a charcoal fire, commonly using top round cuts of beef. The cooked roast is sliced thinly and cooked quickly at high temperatures, served rare, and has a smoky flavor. We cook everything from our meats to veggies over charcoal, hence the name, Carbon.

Our Values

Since opening in 2019, we have relocated to our current location and have expanded our menu. Our ingredients are sourced locally, partnering with those who share a similar commitment to responsible practices. This approach not only supports local businesses but also ensures that the food is fresh and of the highest quality. Meats, vegetables, grains - everything that goes into our dishes is selected with care and consideration. All of our sauces and condiments are made in-house, from scratch.

Owners Catherine and Stephen are invested in the local community and pride themselves in working with organizations like Eastside Neighborhood Services.

Gastrotruck has had over 14 years in the business, and was one of the first food trucks in the Twin Cities. Over the years, Gastrotruck has expanded operations to include full-service catering. We are able to cater events of all sizes, bringing our unique culinary experience to a broader audience. Whether it's a small private party or a large corporate event, graduation party or wedding, our catering service promises to add a memorable gastronomic element to the occasion.

Our event space, opened in the spring in 2023, and offers a minimalist, industrial vibe that is the perfect blank canvas for any event. With over 11,000 sq. ft. of a totally open floor plan, the venue can host a number of events including weddings, corporate events, etc. The space can accommodate more intimate gatherings, or larger parties of up to 275 guests seated, or 500 reception style.
